Red Gold Shakshuka (Quick Tomato Base)
Shakshuka is a North African and Middle Eastern dish where eggs are poached in a rich tomato sauce with onions, garlic, peppers, and spices.
Using Red Gold Concentrate replaces the chopped tomatoes, and long simmering normally required to create a thick tomato base.

Ingredients
Starter Base
- 1 tablespoon Red Gold Concentrate
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 120 ml warm water or vegetable stock
Seasoning
- 1 teaspoon paprika
- ½ teaspoon cumin
- pinch chilli flakes or cayenne pepper
- salt and black pepper to taste
Finish
- 3–4 eggs
- chopped parsley or coriander
- optional feta cheese
- bread for serving
Method
1. Prepare the vegetable base
Heat olive oil in a wide frying pan over medium heat.
Add the chopped onion and bell pepper and cook until softened, about 4–5 minutes.
Add the minced garlic and cook for about 30 seconds until fragrant.
2. Add the Red Gold tomato base
Add 1 tablespoon Red Gold Concentrate to the pan and stir to coat the vegetables.
Pour in the warm water or stock and stir well to dissolve the concentrate into a rich tomato sauce.
3. Season the sauce
Add paprika, cumin, chilli flakes, salt, and pepper.
Simmer for 3–5 minutes until the sauce thickens slightly.
4. Add the eggs
Use a spoon to make small wells in the sauce.
Crack the eggs into the wells.
Cover the pan and cook until the egg whites are set but the yolks remain soft, about 4–6 minutes.
5. Finish and serve
Sprinkle with chopped parsley or coriander.
Add crumbled feta cheese if desired.
Serve immediately with bread for dipping.
Why Use Red Gold Concentrate
Traditional shakshuka recipes usually require chopped tomatoes or canned tomatoes simmered for 10–20 minutes to create a thick sauce.
Using Red Gold Concentrate replaces:
- chopped tomatoes
- canned crushed tomatoes
- tomato paste
- long reduction time
The concentrate already contains roasted, reduced tomato flavour, allowing the sauce to develop quickly.
Variations
This Red Gold shakshuka base can easily be adapted:
- Spicy version: add harissa or extra chilli
- Mediterranean version: add olives and feta
- Green shakshuka: add spinach near the end of cooking
- Hearty version: add lamb mince or chickpeas to the sauce
